Dressing3/4 C. White Vinegar1/2 C. Canola Oil1 tsp. salt1 Tbsp. water1/2 C. Sugar1/2 tsp. pepperOther ingredients2 oz. pimentos, drained15 oz. black beans. drained and rinsed15 oz. blackeye peas, drained and rinsed15 oz. pinto beans, drained and rinsed15 oz. chickpeas, drained and rinsed11 oz. shoepeg corn, drained14 oz. petite cut diced tomatoes & green chiles1 C. celery, diced1 C. onion, diced1 C. green pepper, diced
Mix dressing ingredients together and boil. Cool.
Combine other ingredients in large bowl. Pour cooled dressing over all. Refrigerate at least 24 hours before serving. May be kept for days. Serve with tortilla chips.
