Black Bean and Rice Soup

Ingredients
Bush's Baked Beans 15 oz canRosarita No Fat Traditional Refried Beans 16 oz canCanned Diced Tomatoes 14.5 oz canExtra Virgin Olive Oil, 1 tbspOnions, raw, 1 smallCarrots, raw, 1 mediumGarlic, 3 cloves mincedBay Leaves, 2Cumin, ground, 1 tspThyme, ground, 1 tspCayenne Pepper, ground, .5 tsp99% Fat Free Chicken Stock, 4 cupsOrganic Texmati Brown Rice Long Grain, .5 cup dryYellow Sweet Corn, Frozen, 1 cup kernels
Directions
In a four quart non-stick pan saute onion, carrots and garlic in olive oil 5 minutes while you prep the remaining vegetables. Add the beans, rice, tomatoes and their juice, 4 cups chicken stock, bay leaves, cumin, thyme, and cayenne pepper. Season with salt and black pepper to preference. Simmer for approximately 1 hour. Makes approximately 8 servings.
