No Oil Spelt and Oat Flour Pancakes

4 cups quick cooking oats2 cups wheat flour1 cup all-purpose flour1-cup spelt flour1-cup non-fat dry milk4 tablespoons cinnamon5 teaspoons salt3 tablespoons baking powder8 Tablespoons dry whole eggs6 Tablespoons LecithinIngredients to add to 2 cups Dry Mix:1.125-cup water
1. Combine all ingredients and stir to mix well. Store in refrigerator. Makes about 8 cups dry mix.
2. In a medium mixing bowl, alternately beat in 2 cups plus 2 tablespoons pancake mix, and 1.125 cup of water plus 4 tablespoons.
3. Pour in large spoonfuls into a lightly greased skillet over medium-high heat, and cook until the tops show broken bubbles, about 2 to 3 minutes.
4. Turn and cook about 2 to 3 minutes more, until golden brown.
1 serving = 1 pancake
2 cups plus 2 tablespoons of dry mix will make 10 pancakes
