Red Ripe Tomatoes, 8 medium whole (2-3/5" dia) Basil, 10 tbsp Garlic, 4 cloves *Extra Light Olive Oil, 2 tbsp *Arborio Rice (Risotto Rice), Dry, Uncooked, 0.5 cup pam spray
preheat oven to 400
spray a shallow baking bish with pam
remove 1/2' Thick slice from tops of tomats reserve.
carefull scoop out pulp from each tomato dont pierce skin of tomato
put pulp in blender with with 12 fresh basil leaves and garlic blend until almost smooth return to bowl mix in uncooked rice. stuff tomatoes evenly replace the top slice and drizzle the oil evenly over tomatoes. Roast tomatoes for 50 minutes until rice is cooked. Tomatoes will be well browned. serving size is 2 tomatoes..
