Mexican Rice

Ingredients
1/2 c chopped onion1/2 c chopped green bell pepper1 roma tomato chopped1 garlic clove minced1 c white rice1 c chicken stock1 c water1 tsp ground cumin1/2 tbsp chili powder1 tsp garlic powder1/4 c tomato sauce1 tbsp canola oil
Directions
saute onion, bell peper, tomato and garlic in a large sauce pan with oil. Add in rice and coat well. Add in cumin, chili powder, and garlic powder and stir. Add in stock and water, stir. Add in tomato sauce and stir. Bring to a boil and lower heat and simmer til done, about 20 minutes. Makes 6 servings.
