Quinoa Pilaf

1 cup quinoa1/4 tsp turmeric1 tbsp olive oil2 cloves garlic, minced1 large carrot (or 5-10 baby carrots), chopped1/2 red bell pepper , chopped1/2 zucchini, chopped1/2 yellow summer squash, chopped6 mushrooms, chopped1/3 cup frozen corn1/3 cup frozen peas1 tsp salt1 tbsp parsley
In a pot, combine 1 cup quinoa, 1/4 tsp turmeric, and 2 cups water. Bring to a boil, cover, reduce heat, and cook for 15 minutes.
In a saucepan, heat olive oil. Add minced garlic, then carrots, bell pepper, zucchini, and summer squash, and saute until tender. Add the mushrooms, and saute a few minutes more. Add salt, parsley, frozen corn, and frozen peas, and heat until everything is hot.
Add to the cooked quinoa, stir, and serve.
