Cream of Portebella Mushroom Soup

Ingredients
* 200 grams Portebella Mushrooms 0r 2 cups * 4 cup Chicken Broth * 2 cup Milk, * 1 small Onions finely chopped *1 stalk Celery finely chopped * 1/2 cup Margarine * 1/2 cup Flour, white * 1/4 tsp Garlic powder * 1/4 tsp Nutmeg, ground *1 tsp Salt *1/2 tsp Pepper, black, *1 tbsp, crumbled Bay Leaf
Directions
** Saute onion, mushroom, nutmeg, celery and garlic powder in a saucepan.
** Then add chicken broth, bring to boil and then simmer 5 minutes.
** In another saucepan melt butter then add flour, salt , pepper and mix together.
**Add milk to this mixture and stir until thickened.
DO NOT BOIL
**Add mushroom mixture and bay leaves to milk mixture and then simmer.

Makes 6 - 1 cup servings

    Really good. I used half n half instead of milk total of 60 cal more verse 2% milk in the recipe but perhaps worth it - 10/12/13

    I had portabella mushrooms to use up and thought I'd give this a try. Never had a homemade cream of mushroom soup and I thought it was just something you bought in a can to make casseroles. I used mostly evoo w/ a touch of butter for a healthier roux. Well, I have one word to say... DELISH! - 8/24/09
