Ingredients
Zucchini - 1Red Ripe Tomatoes, 2 medium whole Onions, raw, 1 Olive Oil, 1 tbsp Garlic, 2 clove Tomatoes, Diced, Canned, No Salt Added, 1 cup
Directions
cut zucchini into discs. cut onion and tomatoes into bite size pieces. add in canned tomato and chopped garlic and 1 tbsp olive oil in a big bowl with onion, zucc, and tomatos. Stir with your hand until combined. Put mess on sheet pan and spread evenly. Season to taste. 425 degrees for 9 minutes, then flip zucchini pieces and cook another 9 minutes. Serve warm. 4 servings.
