Crock Pot Wino Beef Stew

* 1 lb. stewing beef or roast (I use the pre-cut beef from the grocery store)* 1 - 2 cups red wine* 2 tbsp minced garlic* 1 can low sodium beef broth* 1 can low fat cream of mushroom soup* Potatoes (4 large, peeled and cut up)* 1/2 package baby carrots* 4 cups slivered mushrooms*1 large onion, chopped* 1 cup quick barley* salt, pepper and seasoning as you wish
Put wine, garlic and beef in crock pot. Cook on high for 3 - 4 hours or until beef is cooked through.
Add carrots, mushrooms, potatoes, onion, beef broth and mushroom soup. Cook on high for 1.5 - 2 hours. *you may need to add water here and there.
Add barley and cook for 30 min.
Makes roughly 12 1 cup servings.
