Tosca Reno - Brown rice w/tomatos (modified)

1 can of chicken broth 98% fat free + 3 cups of boiled water.2 cups of brown rice1/2 onion3 tbsp of virgin olive oil1/2 cup fresh parsley4 roma tomatoes
Cut tomatoes (coarse) and bake at 400F for 12-15 min. Saute shopped onion in 1 tbsp of olive oil. Add 2 cups of brown rice and 2 tbsp olive oil into onion mixture. Saute about 3-5 min while slightly stirring it. Add chicken broth and boiled water to the rice/onion mixture and bring to boil. reduce to simmer and add tomatoes. Cover and leave for 35-40 min checking periodically. This dish could be cooked in the oven as well as stove top. Enjoy. Good stuff.
