Zuchinni, fresh, shedded, 3 cup Egg, fresh, 3 large Canola Oil, 1.5 cup Mayonnaise, regular, 1/4 cupSour Cream, 1/2 cup Salt, 2 tsp Sugar Substitiute (like Splenda), 1 3/4 cupsSeparate Bowl Mix: Soy Flour, 1.5 cupWhole Wheat Flour, 1.5 cupFlaxseed Meal, 3 tbsp Baking Powder, 2 tspBaking Soda, 1 tsp Nutmeg, ground, 1 tsp Cinnamon, ground, 2 tsp Wanuts, chopped 1 cup
Preheat oven to 350 degrees
Mix Zuchinni with wet ingredients, plus sugar substitute
set aside
In Separate bowl sift or mix dry ingredients
Stir together, batter will be very stiff
Fold in walnuts
Spoon into 2 greased. floured bread pans
Bake 80-90 minutes at 350 degrees
Test for doneness when knife comes out clean
