Zucchini, 2 cup, slicedSmall onion, slicedGoya Tomato sauce (8oz can), 4 oz 1 slice of whole wheat breadBreadcrumbs, 3/4 cupOregano, ground, 1 tsp Basil, 2 tbsp Parmesan Cheese, grated, 2 tbsp Garlic powder, 1.5 tsp Parsley, 4 sprigs fresh, or 1 tsp dried1 egg, beatenFeta Cheese, 2 oz crumbledMozzarella Cheese, part skim milk, 3 oz grated
Preheat oven to 350 degrees.
In large skillet, saute zucchini and onion in olive oil over medium heat, until caramelized. Add Goya tomato sauce.
In food processor, combine breadcrumbs, slice of whole wheat bread, oregano, basil, Parmesan cheese, garlic powder, and parsley. Add egg, and press mixture into a greased glass pie dish, forming a crust. Note: if mixture is too dry, add water slowly. Pour 1/2 of zucchini mixture on top, 1/2 of feta and mozzarella, repeat. Bake at 350 degrees for 30 minutes or until top is golden brown.
