Rustic Berry Tart

2 cup whole wheat flour1/2 tsp plus 1/3 cup Splendapinch of salt1-1/2 sticks light butter, chilled and cut in 1/2" pieces1/3 cup orange juice (lime or lemons juice works as well)4 cups berries (strawberries, blueberries, blackberries, raspberries, cherries)1 Tbsp cornstarch2 tsp ground ginger2 small apples, peeled, cored and sliced thin1 orange zest1/4 cup egg or egg substitute
Combine flour, salt and 2 tsp Splenda in mixer and pulse to combine. Add butter and mix (or cut in with 2 knives or pastry knife) until mixture resembles coarse sand. Add juice until dough holds together when squeezed. Shape into disc, wrap in plastic wrap and chill for 30 minutes.
Preheat oven to 375. Combine all remaining ingredients except egg and set aside.
Roll dough out to 12" and place on lightly greased cookies sheet. Mix egg w/ a little water or use egg substitute to brush 2" inner edge of crust. Arrange fruit in center, being careful not to include too much juice. Fold and loosely pleat edges. Brush edges again with egg wash to help pleats stick.
Bake until bubbly and golden (30-40 mins).
Serve w/ ice cream or whipped topping.
