Leftover Bread and Tomato Salad

Ingredients
2 cups diced crusty bread (Italian or French)2 cups diced and seeded tomatoes1 cucumber, diced5 leaves basil, shredded1 1/2 tbsp. balsamic or red wine vinegar1 1/2 tbsp. extra virgin olive oil1 shallot, finely choppedsalt and pepper to taste
Directions
Makes 6 servings.
Mix vinegar, olive oil, shallots, salt & pepper in a large bowl. Add tomatoes, cucumber, basil, and bread. Toss lightly.

Other vegetables can be added as desired--it's a great way to use leftover bread and fresh veggies.

Let sit for at least 15 minutes before eating.
