Ingredients
Lentils, 4 cup (remove)Zucchini, baby, 1 large (remove)Green Beans (snap), 1.5 cup (remove)*Potato, raw, 4 large (3" to 4-1/4" dia.) (remove)Carrots, raw, 2 medium (remove)Celery, raw, 1 stalk, large (11"-12" long) (remove)Spinach, fresh, 2 cup (remove)*Barilla Pastina, 3 oz (remove)Olive Oil, .25 cup (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)
Directions
Dice all ingredients apart from Lentils. Heat oil in a large saucepan and fry the onion until transparent. Add all diced vegetables and a 1/2 cup of water. Cook for approx 5 mins then cover the rest of the vegetables with water and let simmer until all vegetables are cooked. (approx 1/2hour) once cooked add pastina and salt and pepper to taste and once the pastina is ready serve with crunchy bread and parmesan cheese.
