Courgette Salad with Pine Nuts

1 tbsp extra virgin Olive oil2 shallots or 0.5 small red onion, finely chopped or sliced3 courgettes, thickly slicedGreen Beans (french), 0.5 cup, cut into 2, blanced in boiling water for a minute or two.1 clove Garlic, slicedjuice of 1/2 Lemons2 tbsp Pine kernelsblack pepperrocket leaves, 1 cuptomatoes, cherry, 1 cup, halved
1. Heat the olive oil in a frying pan. Add the onion and fry for a minute or two to soften, then add the courgettes in a single layer and fry over medium-high heat for about 2 minutes until the underside is lightly flecked with brown.
2. Turn carefully with tongs, then add the garlic and fry for another minute, taking care not to let the garlic burn.
3. Pour over the lemon juice, add the tomatoes, green beans and pine nuts and season with salt and pepper. Lower the heat and fry for another 5 minutes until the courgettes are just tender.
4. Serve warm or at room temperature on a bed of rocket leaves.
