Ingredients
3 small loaves of day old italian or french bread6 Tbls olive oil1/4 c balsamic vinegar4 cloves garlic, minced5 med tomatoes, chopped3 med zucchini, chopped1 lrg yellow pepper, chopped15 basil leaves, shredded1/4 c fresh oregano or 1 tsp dried oregano1/4 cup shredded low fat or fresh mozzarella, chopped1 Tbls fresh ground pepper
Directions
Cut bread into one inch cubes, cutting off most of the crust.
Toss with 2 tbls oil and all of the garlic.

Lay flat on cookie sheet and bake in preheated oven for about 10 minutes or until lightly browned. When done let bread cool before tossing with vegetables.

While bread is browning, blend rest of olive oil with balsamic vinegar, basil, oregano and pepper.

Toss everything in a large bowl and serve.
