Minestrone Soup

6 cups Chicken stock1 lbs Sweet Italian sausage1 c. Raw zucchini1 c. Raw Yellow summer squash3 Large fresh mushrooms1/4 c. Chopped onion2 cloves garlic, chopped5 small red, yellow, or orange sweet peppers, chopped1 can green beans, drained1 can chopped tomatos1 tbsp fresh or dried oregano2 tbsp fresh or dried basil1 tbsp paprika
Brown Italian sausage, drain. Saute onion, garlic, and peppers for about 5 minutes, add celery and mushrooms, continue saute for 5 more minutes. While sausage is browning, chop all veggies in bite size pieces. In a large stock pot (at least 5 quart), combine all veggies, sausage, and sauteed veggies. Add one can of green beans, drained and one can of chopped tomatos, don't drain the tomatos. Pour in the Chicken stock and stir. Bring to a roiling boil, then reduce heat and simmer for 30 minutes.
