2 medium Onions-, raw, diced (2-1/2" dia) 1 hot pepper , sliced2 tbsp Butter, unsalted4 cup Stewed Tomatoes2 cup Rice , rawSalt and pepper to tastePaprika to taste
Brown onions and pepper in butter in large sauce pan.
Add paprika to taste.
Process tomatoes briefly in blender ( or food processor)
Combine tomatoes, rice salt and pepper to onions.
cover and cook until rice is tender (approx 45 min.) adding additional water if necessary. This should be a bit soupy looking.
Remove pepper slices before serving
Serves approx 16 (1/2 c. )
