Cheesy Cauliflower Soup

Ingredients
4 cups cauliflower, parboiled1/8 cup margarine (2 Tbsp)1/4 cup onion1/8 cup flour (2 Tbsp)3 cups chicken broth2 cups skim milk2 oz cheddar cheese, shredded
Directions
1. Cook cauliflower in minimal water until partially cooked.
2. Saute onions and margarine in large saucepan until yellow. Blend in flour. Add chicken broth, milk, cauliflower, and the water that the cauliflower was cooked in. Cook until mixture thickens slightly. Add cheese and stir to melt
