1 pkg. firm tofu1.5 tbsp. sesame oil1 tbsp. soy sauce3 tbsp. miso paste3 tbsp. C. chicken broth1 C. carrots1 C. celery1 sml onion1 bell pepper1 zuccini2 tsp. ginger root7 C. glass noodles (1 C. per svg)
Directions
sprinkle tofu with soy sauce, brown tofu in 1 tbsp. sesame oil, about 5 min. total. put aside and slice. In same pan, saute onion, carrot, celery, pepper zuccini,

Prepare noodles as directed on pkg.

In a bowl, wisk together miso paste 1/5 tbsp. sesame oil, ginger root, broth

when veggies are done toss together with noodles and miso dressing, top with tofu...makes 7 2-cup svgs
