Pepperoni Salad

Ingredients
Turkey Pepperoni - One serving (16 slices), choppedBlack Beans - 1/2 CupChopped fresh onion - 1 TbspWhite Rice -1 1/2 CupOlive Oil - 1 TbspSeasoned Rice Vinegar - 1 TbspSalt and Pepper to taste
Directions
This list of ingredients is just for one serving.

Make the rice according to the package directions (I usually use asian sticky rice). Heat up the black beans in the microwave.

When the rice is done, put the black beans over the rice in a bowl. Top with onion, pepperoni, oil, vinegar, salt and pepper.

I know it sounds strange but it is SO good!
