Brown Rice & Broccoli Pilaf

Ingredients
1 cup brown rice2 Tbsp. Smart Balance Light Spread1 small onion, chopped1/4 cup finely chopped mushrooms2 1/4 cup chicken broth8 oz. frozen broccoli, cooked and chopped1/4 cup light sour cream1/4 cup shredded cheddar cheese
Directions
Saute onion in smart balance about 4 minutes on med-high heat. Add mushrooms, cook and stir 2 more minutes. Add brown rice and saute 2-3 more minutes. Add broth, bring to boil, then cover and reduce heat to low. Simmer, covered, for 45-50 minutes until liquid is absorbed and rice is tender. Meanwhile, cook frozen broccoli in microwave as directed. When rice is done cooking, stir in sour cream, shredded cheese and the broccoli. Makes eight 3/4 cup servings.
