Cheesy Ham & Cauliflower Casserole

4 cups of Cauliflower cut into 1" pieces 1 cup Fat Free Half & Half4 oz Fat Free Cream Cheese10 oz Turkey Cured Ham1 3/4 cups Sharp Cheddar Reduced Fat Shredded Cheese1/4 tsp Garlic Powder1/2 tsp Onion Powder1/4 tsp Ground Black Pepper
Makes 4 Servings Preheat oven to 375 degrees
Make sure the rack in oven is in the center position and preheat oven. Start a pan of water to boil. Spray casserole dish with vegetable oil.
Dice cauliflower pieces into 1" pieces and place in water when it begins to boil, cooking for 5 minutes until crisp. Drain and pat between layers of paper towels to dry and transfer cauliflower to baking dish.
Bring the Half & Half to a simmer in a saucepan and whisk in cream cheese, pepper, onion powder and garlic powder until smooth. Add 1 1/4 cups of cheddar cheese and whisk for a minute until cheese melts. Remove from heat and pour over the cauliflower in the casserole dish.
Sprinkle the ham cubes over the top of the casserole and top with remaining 1/2 cup of cheddar cheese. Bake for about 15 to 20 minutes until brown and bubbly hot. Let cool for 5 minutes and serve.
