Allyson's Chana Masala

Ingredients
3 cups of chick peas (canned)4 tsp olive oil2 cups of chopped onion3 tbsps of minced ginger ( fresh or jarred)2 cloves of chopped garlic1/4 tsp salt2 tsp cummin1/4 tsp cayenne pepper1 1/2 cups of vegetable broth1 cup chopped tomato (canned or fresh)4 tbsp chopped fresh cilantro1/4 tsp garam masala
Directions
Heat oil in a large nonstick skillet ove rmedium heat. Add onion, ginger and garlic to pan; cook 5 minutes, stirring occasionally. Stir n salt, cumin and pepper; cook 1 minute. Add chick peas, broth and tomato; cook until most of the liquid is evaporated (about 15-20 minutes). Stir in cilantro. Serve hot or cold.
