Whole-Wheat Pasta Salad with Walnuts and Feta

1 box whole wheat spiral pasta (13.25 oz.)1/2 c. walnut pieces1/2 c. Feta cheese1/2 c. chopped red onion1 1/2 c. chopped baby spinach1/4 c. olive oil1/4 c. red wine vinegar1 garlic clove, chopped1 tsp. dijon mustardsalt and pepper to taste
Cook the pasta according to the package directions. Drain the pasta, rinse under cold running water, and put it in the refrigerator to chill.
In a small dry skillet, toast the walnuts over medium-high heat, stirring frequently until fragrant, 3-5 minutes. Set aside to cool, then chop coarsely.
In a large bowl whisk together the oil, vinegar, garlic, and mustard. Add the onion, pasta, walnuts, feta, and spinach. Toss to combine. Season with salt and pepper. Makes four 2 cup servings.
