Chocolate Chip Banana Bread

1-¼ c. sugar½ c. margarine or butter, softened2 eggs1-½ c. mashed bananas (3 to 4)½ c. skim milk1 tsp. lemon juice1 tsp vanilla2-½ c. all-purpose flour1 tsp baking soda1 tsp salt1 c. chopped nuts, if desired.1 c. chocolate chips (mini work best)
Place oven rack in lowest position. Heat oven to 350 degrees. Grease 2 loaf pans.
Mix sugar and margarine in large bowl. Stir in eggs until well blended. In a small bowl, mix milk and lemon juice and let sit for about two minutes. Add bananas, milk mixture, and vanilla to the large bowl. Beat until smooth. Stir in remaining ingredients except nuts and chips, just until moistened. Stir in nuts and chips. Pour into pans. Bake about one hour, till wooden pick comes out clean. Cool 5 minutes.
Makes 2 loaves.
