3 LargeTomatoes,peeled and seeded5 Garlic cloves finely chopped1/2 leek thinly sliced1/2 zucchini in chunks1T olive oil2 T parmesan cheese
Lightly saute garlic and leeks, add chopped tomatoes and simmer 20 minutes, break up tomatoes as much as you like. Add zucchini and simmer until tender. Serve over pasta Sprinkle each with 1 T parmesan cheese
This will make 2 nice servings with pasta.
