1 c bulger wheat1 c water3 T lemon juice3 T olive oil1/4 tsp cumin1 c chopped parsley1/2 c chopped fresh mint1 c halved cherry tomatos1 c chopped English cucumber1/2 c. cubed feta cheese3 scallions, chopped
Serving Size = 3/4 cup, makes approx. 8 servings
Place 1 c. bulger in a metal bowl. Pour 1 c. boiling water over it, and let it sit , covered, for about one hour till water is absorbed. Add in other ingredients and then refrigerate for 1-2 hours for flavors to blend. Salad may be eaten cold or at room temperature.
