Tabbuleh Salad

Ingredients
1 c bulger wheat1 c water3 T lemon juice3 T olive oil1/4 tsp cumin1 c chopped parsley1/2 c chopped fresh mint1 c halved cherry tomatos1 c chopped English cucumber1/2 c. cubed feta cheese3 scallions, chopped
Directions
Serving Size = 3/4 cup, makes approx. 8 servings

Place 1 c. bulger in a metal bowl. Pour 1 c. boiling water over it, and let it sit , covered, for about one hour till water is absorbed. Add in other ingredients and then refrigerate for 1-2 hours for flavors to blend. Salad may be eaten cold or at room temperature.

    Such a refreshing and "green" tasting dish. Love it so much. Healthy and easy. I have made it without feta also and it is just as wonderful. I leave out the cumin and add some cinnamon and allspice to give it that authentic mediterranian taste! - 3/23/12
