Soft Zucchini Bread 1/2 oil 1/2 applesauce

Ingredients
3 eggs, beaten1/2 c cooking oil1/2 c unsweetened applesauce2 c granulated sugar2 c grated zucchini squash1 t. vanilla3 c. flour1 t. salt3 t. cinnamon1/4 t. baking powder1 t. baking soda1 c. chopped nuts (optional--not in calories)
Directions
Combine eggs, oil, and sugar until well blended. Stir in zucchini and vanilla. Sift together flour, salt, cinnamon, baking powder, baking soda; stir into zucchini mixture. Stir in chopped nuts. Bake in well-greased loaf pan at 350 degrees for 1 hour.
