Soft Zucchini Bread w/ applesauce no oil

Ingredients
3 eggs, beaten1 c unsweetened applesauce2 c granulated sugar (or 1 brown sugar + 1 granulated sugar)2 c grated zucchini squash1 t. vanilla3 c. flour1 t. salt3 t. cinnamon1/4 t. baking powder1 t. baking soda1 c. chopped nuts (optional--not in calories)
Directions
Combine eggs, oil, and sugar until well blended. Stir in zucchini and vanilla. Sift together flour, salt, cinnamon, baking powder, baking soda; stir into zucchini mixture. Stir in chopped nuts. Bake in 2 well-greased loaf pan at 350 degrees for 1 hour.

    Try adding a couple Tbls. orange, lemon or lime zest - amazing. This is the same recipe I have used for years out of a cookbook my mother gave me that she purchased to support the diabetes association. I just started substituting applesauce for the oil. - 8/12/15

    I cut the sugar down significantly as I a riped banana was added to the recipe. I used whole wheat flour and added some protein powder. The results was very tasty and the texture was wonderful. - 5/5/19

    I was just going to enter this as it is the same recipe that I got from my mom-in-law except I subbed the applesauce, like you did. Texture is a little different, but very tasty. DH does not like nuts or raisins, so our is plain. I made four mini loaves and baked in convection oven for 25 minutes - 7/27/11
