Julie's No Guilt Sweet Bread Mini-Cakes

Ingredients
1.5 Cups Sugar1.5 Cups Flour5 Egg Whites2 T Applesauce, unsweetened4 T Cocoa Powder2 T Instant Coffee1 t Vanilla
Directions
Preheat oven to 350°, grease an 8x8" baking pan. (If you want to just make a loaf of bread instead of cakes or bars, use a loaf pan.)

Mix sugar, egg whites, applesauce and vanilla together. Add flour, cocoa powder and coffee. Stir well.

Spread batter into pan and bake until done (about 30 minutes for the 8x8 pan).
