Plum Jam Cake

Ingredients
Butter, unsalted, 1 cupGranulated Sugar, 2 cupsPlum Jam, 2 cupsFlour, white, 3 cups1/2 tsp salt2 tsp baking soda
Directions
Preheat oven to 325 F. Lighlty oil a non-stick bundt or tube pan. Cream the butter and sugar, then beat in the jam. Add the dry ingredients and mix into a stiff batter. Bake for 1 hour. Cool 10 minutes, then invert onto a cooling rack. Makes 24 slices.

    The cake itself is very good. Reminds me of a brownie in it's richness. It does need to be cooked for longer than 1 hr. My guess is that it needs 90 minutes or a higher cooking temp. - 10/2/12
