Fruit of choice, 6 cups slicedGranulated Sugar, .75 cupLemon Juice, .05 cupMinute Pearl Tapioca, .25 cup # Granulated Sugar, .25 cup# Egg, fresh, 1 large # Milk, nonfat, .5 cup# *Molasses, blackstrap, .25 cup # *Corn Oil, 2 tbsp# *Flour, white, 1 cup # Baking Powder, .5 tsp# Baking Soda, .5 tsp # Nutmeg, ground, .25 tbsp# Ginger, ground, .5 tsp # Salt, .25 tsp
mix fruit, 3/4 c sugar, lemon juice, and tapioca in a bowl till coated, let stand.
beat egg, add and mix everything else together.
pure fruit mixture into 8x8inch square pan, then add gingerbread mixture on top.
bake at 350* for 30 minutes, then pull out, cool and enjoy.
