Sue's Italian Rice Salad

Ingredients
1 c long grain rice, cooked and left to cool2 artichoke hearts, roughly chopped (jarred or canned)6 oz light tuna in oil, drained1/3 c frozen peas cooked and cooled (I used fresh)1 large ripe tomato, diced1/4 c cubed fresh mozzarella cheese1/4 green bell pepper diced2 mushrooms, sliced2 T pine nuts, toasted2 T flat leaf parsley, chopped4 T olive oil1.5 T lemon juice1 garlic clove chopped1 t salt1/2 t black pepper
Directions
Mix together the rice, artichoke hearts, tuna, pas, tomato, cheese, bell pepper, mushrooms, pine nuts, and parsley in a bowl. Mix the oil, lemon juice, garlic, salt and pepper in a bowl and whisk until combined. Pour dressing over the rice mix, mix together to combine thoroughly, and serve.
