Fettucini with chicken & mixed peppers

Ingredients
1 tsp. olive oil2-3 chicken breasts1 each green, red, & yellow pepper1 onion2 cloves garlicpinch red pepper flakes3 tbsp basil (1/4 c. fresh)salt & pepper to taste1 28 oz can plum tomatofettucinni or other pasta
Directions
Heat oil and add onion , garlic and red pepper flakes.
cook 5-8 min.
Add chicken (bite size pieces) and brown on all sides.
Add peppers and cook for 5 min.
Add tomatoes,salt, pepper& basil
Bring to a boil and then simmer 5-8 min.
Serve over cooked pasta.

    Very tasty. The only changes we made were a little extra garlic and some mushrooms. My hubbie and I like our sauce a little thicker so next time we will probably add some tomato paste. - 11/7/07
