Chunky Gazapcho

Ingredients
I large cucumber, peeled and chopped2 tomatoes, chopped1 red onion, peeled, chopped1 medium green pepper chopped1 pimento drained and chopped optional2 large cloves garlic chopped1/3 cup olive oil *1/3 cup red wine vinegar *1 46 oz can tomato juice 1/4 tsp liquid hot pepper1 1/2 tsp salt1/8 tsp coarsely ground black peppercroutons if desiredchopped chives if desired* you can also substitute fat free Italian salad dressing for these. Gives it a zippier taste
Directions
Mix all ingredients except for the croutons and chives in a large bowl. Refrigerate covered 2-6 hours , although it is bested served chilled overnight. Garnish with the croutons and chives if desired.
