Black Bean & Chicken Chili

3-15.5 oz Cans Goya Black Beans2-14.5 oz Can Hunt's Diced Tomatoes1-16 oz Package Boneless Skinless Chicken Breast1-Cup Water1-Red Bell Pepper2-3-Jalapeno Peppers1-Vidalia Onion1.5 tsp.-Minced Garlic2 tsp.-Goya Adobo2 tsp.-Chili Powder1 tsp.-Ground Cumin1 tsp.-Black Pepper2 tbs.-Extra Virgin Olive Oil
Pre-heat oven to 350 degrees, season chicken with Adobo, Chili Powder and Ground Cumin and bake in covered casserole dish for 25 minutes then cut into bite size pieces and add to large sauce pan.
While the chicken is baking add Black Beans and Diced Tomatoes and 1 cup of water to large saucepan, add Adobo, Chili Powder, Ground Cumin and Black Pepper, set to simmer.
Dice Red Bell Pepper and Vidalia onion.
Sautee the onions, bell pepper, jalapenos and Garlic in olive oil then add to saucepan.
Simmer approx. 20 minutes then enjoy.
Makes approx. 10 - 1 cup servings.
