Turkey Meatloaf Muffins

Ingredients
Ground Turkey, 20.8 oz. package (93% lean)1 Large Egg1/4 cup seasoned bread crumbs2 Tbsp. Ketchup6 oz. Cheddar Cheese, cut into 6 chunkssalt, pepper, herbs, spices of your choice, optional
Directions
In a large bowl mix all ingredients except cheddar cheese chunks. Cut the 6 oz block of cheddar cheese into equal-sized chunks. Divide the turkey mixture into 6 equal portions. Form into a ball shape, completely hiding one cheese chunk in the center of each portion. Spray a 6-portion muffin tin with cooking spray and place the meatloaf balls into the muffin tins, one muffin per space. Bake in an oven preheated to 375 degrees. Allow meatloaf muffins to bake for at least 30-35 minutes. Muffins are done baking when they pull away slightly from the sides of the tin and when juices run clear when pricked with a fork.

    These were so easy and very yummy! My husband loved it and didn't even mind that it was turkey vs. beef. I forgot to put the egg into the mixture, but it still turned out fine. And, I used pepperjack instead of cheddar to give it a little kick. I will for sure be making these again! - 9/13/09

    Was VERY easy and Verrry good. Using a muffin tin is a great aid in portion control and makes forming the loafs a whole lot less messy! Will definately make again and again! YUMMM! :) - 8/14/07
