Cranberry Walnut Oat Bran Muffins

1 C. oat bran3/4 C. white flour3/4 C. whole wheat flour1/3 C. sugar1 T. baking powder1/4 tsp. salt3/4 C. coarsely chopped cranberries4 or 5 dates, coarsely chopped3/4 C. coarsely chopped walnuts1 C. milk (2% used in calculations)1/2 C. unsweetened applesauce1 tsp. vanilla1 egg
Preheat oven to 350 degrees. Line a muffin tin with paper liners, or spray with cooking spray. Combine dry ingredients, set aside. Beat egg, then add milk, vanilla, and applesauce. Make a well in the dry ingredients, pour in wet ingredients and mix just until moistened. Fold in cranberries, walnuts and dates (the dates add a little extra sweetness!) Use an ice cream scoop to scoop batter into muffin tin. Bake for 20 minutes until a toothpick inserted into a muffin comes out clean. If paper liners are used, it's best to let the muffins cool completely before serving - it makes removing the liners much easier!
