Roast Beef Panzanella Salad

4 oz. Athenos Baked Pita Chips (crunched and broken down a little bit)2 large tomatoes, chopped1/2 English cucumber, chopped1 small red or sweet onion, chopped3 Tbs balsamic vinegar1 Tbs olive oil1/4 tsp pepper1/2 pound thinly sliced Italian flavored roast beef, cut into strips
Combine all ingredients together in a large bowl. Toss well and let set 10 min. so that the pita chips absorb some of the juices. Then serve.
***You can add the following if you'd like (I didn't have them when making the recipe)...
1/4 cup chopped fresh mint or basil
1 Tbs drained bapers
