mexican meatloaf

Ingredients
1/2 cup Eggbeaters1 can Rotel diced tomatoes with green chiles1/4 cup diced onions1 teasp. of Worcestershire sauce1/4 teasp. Black Pepper2 lbs of 93% Lean ground beef1 cup of crushed Ritz crackers1 cup of Kraft Fat Free Shredded Cheddar Cheese1 cup of Mild Salsa1 teasp. Salt
Directions
Preheat oven to 350 degrees F. Combine all ingredients except beef and salsa in a large bowl. Mix well and then add beef and re-mix. Press into a 8x8 inch square baking pan sprayed with Pam cooking spray. Bake in preheated oven for 35 minutes. Then remove loaf from oven and drain any excess liquid. Spread a layer of salsa on top of meatloaf and return to oven for about 15 more minutes, or until it is no longer pink in the middle. Remove from oven and enjoy! Makes 6 servings.
