George Washington Cherry Cobbler

1/2 c. sugar2 TB cornstarch1/4 tsp. cinnamon3/4 c. water1 pkg. (12 oz) frozen pitted dark sweet cherries, thawed1 TB butterTopping: 1 C. flour4 TB sugar, divided2 tsp. baking powder1/2 tsp salt3 TB shortening1/2 C milkIce cream, optional
In saucepan combine sugar, cornstarch and cinnamon. Stir in water until smooth. Add the cherries and butter. Bring to a boil over mediium heat; cook and stir for 2 minutes or until thickened. Pour into an 8 in square baking pan. For topping, in a large bowl, combine flour, 2 TB sugar, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. stir in milk just until moistened.
Drop by spoonfuls over the cherries; sprinkle with remaining sugar. Bake at 400 for 30 - 35 minutes. Serve warm with ice cream if desired.
