Creamy Homemade Chocolate Pudding

2 Tbsp Corn Starch2 Tbsp Cocoa powder (unsweetened)3/4 Cup sugar1/4 tsp Salt1 3/4 Cups Milk (I used 2%) **changed from 2 cups due to being too runny1 tsp Vanilla extract1 Tbsp unsalted ButterOPTIONAL: (not included in nutritional info)Fat-free Reddi-WhipGround chocolate pieces (I ground up hersheys Cacao reserve pieces until it was like powder)
In a small pan mix together Corn starch, cocoa powder, sugar & milk. Heat on medium for 10 minutes, stirring constantly. (this is very important to keep stirring)
After 10 minutes turn heat off, keep stirring. Add in Vanilla & Butter, keep stirring for a few minutes. The pudding should start to be thickening. To finish thickening let set in the fridge.
Makes 6 servings, top with Reddi-whip and powder chocolate.

I used 3 tbsp unsweetened cocoa and substituted granulated Splenda in place of the sugar. Takes a while under medium heat to thicken, so be patient and keep stirring. Only makes 3 - 1 cup servings. I have lids for my dessert cups (keeps a skin from forming) or you can use plastic wrap. YUM! - 2/21/11

it was very soupy and did not thicken at all. it needed gelatin or something. - 8/5/09

I have changed the recipe to 1 3/4 cups milk too reduce how runny it is. When I originally made this it was not so runny but it was never as thick as store bought kinds. Could also try adding an extra tbsp cornstarch if you like it thicker.
