Crockpot Moo Shu Chicken

16 bag coleslaw mix 3 large carrots, shredded 1 lb. boneless skinless chicken breasts 1/2 cup hoisin sauce3 cloves of garlic, minced 3 Tbsp soy sauce1 Tbsp cornstarch.
Mix coleslaw mix and carrots in the bottom of crockpot. Top with thinly sliced chicken.
Mix hoisin sauce, garlic, soy sauce and cornstarch. Pour half over crock pot. Cook on low 4-5 hours. Pour rest of hoisin-soy mix on top and mix up.

This was delicious and so simple! My husband LOVES pasta but agrees with me that we can now use the slaw/carrot mixture in place of spaghetti. The store was out of coleslaw, so I used broccoli slaw, but it still tasted great. And if you like heat, Sriracha is a nice addition to this great dish! - 2/14/12
