Easy Crockpot French Onion Soup

1/4 cup olive oil4 medium onions (any variety)3.5 cups chicken or vegetable broth (calories have been calculated for chicken)
Coat the bottom of your slow cooker or crockpot with the olive oil. Cut all onion thinly and coat it with the oil. Leave in the bottom of the cooker and cook for 4 hours on high in order to thoroughly caramelize the onions. Add the broth and switch your cooker to low. Stir once, then cook for 30 minutes.
Note: You can serve this with melty cheese toast if you are missing the traditional cheese topping. 1 slice or equivalent shreds of white cheese (mozz or fontina) per slice of toast (Italian, French, wheat, etc.). Broil for a couple of minutes to melt the cheese and toast the bread.
