Zucchini Cheese Squares

one-half cup olive oil4 eggs1 clove garlic, choppedone onion, chopped3 cups grated or thinly sliced zucchinia handful of various fresh herbs chopped (parsley, oregano, tarragon, rosemary, basil, chives, thyme, sage) or, alternately, one-half teaspoon each of dried oregano, basil, and thyme)1 and-a-half cups grated cheese (Cheddar, Monterey Jack, Parmesan, Swiss)three-quarters cup flour2 teaspoons baking powder1 teaspoon salt
Whisk together the oil and the eggs. Add the vegetables and herbs, and 1 cup of the cheese. Mix in the dry ingredients. Spread in a greased shallow casserole, sprinkle the remaining cheese on top, and bake in a 350 oven for 40 minutes until browned. Let stand 10 minutes before cutting. Serves 6 as a main course.
