Mint Tomato Salad with beans

Ingredients
6 medium tomatoes1/2 red onion1 cup chickpeas (garbanzo beans)1/2 cup fresh mint3 Tbsp extra-virgin olive oil1 Tbsp balsamic vinegar2/3 tsp sea saltGenerous pinch of cracked black pepper
Directions
Combine chopped tomatoes and thinly sliced onions.

If using canned beans, rinse well. Add beans to tomato mixture.

Finely chop mint and add to tomato mixture.

Mix oil, vinegar, salt and pepper.

Gently toss. Let sit at room temperature for 30 minutes to marinate.
