Parmesan Tilapia

Ingredients
6 Tilapia fillets2 eggs, beaten1 Tbsp. water1/4 cup extra virgin olive oil1 tsp. paprika1 tsp. pepper1 tsp. salt1/4 cup parmesan cheese1/2 cup bread crumbs
Directions
Preheat oven to 375. Use cooking spray to spray a glass dish for baking. Beat the eggs and water in a bowl. Combine olive oil with bread crumbs, grated cheese and seasoning. Dip tilapia in eggs then in bread crumb mixture and place in the sprayed baking dish. Cook for 12-15 minutes until cooked through.

I have also used Zatarain's Creole Seasoning in place of the paprika, salt and pepper.
