Ingredients
2 lg eggs4 lg egg whites1/4 cup reduced fat sour cream1/2 cup cauliflower puree 2 tbl parmesanpinch of salt
Directions
Serves 3
Mix together all ingredients. Heat skillet on medium and spray with non-stick cooking spray. Add egg mixture and using plastic spatula mix around until eggs are cooked light and fluffy and a bit moist.
